Leeza’s Pasta al Fresco
1 lb. Pasta
2 cups fresh tomatoes diced and seeded and drained well (or substitute a 28 oz. can of a good quality diced tomato in juice - very well drained)
˝ cup sliced black olives
1 ˝ cups diced mozzarella or feta cheese diced
˝ cup finely diced red onion
1 cup fresh basil rolled and finely sliced
˝ cup Leeza’s creamy Italian dressing
While pasta is cooking place all ingredients except dressing in small bowl. When pasta is cooked, drain well and put into large bowl. Add small bowl of ingredients and mix well. Add Leeza’s creamy Italian dressing and toss. Can be served immediately, room temperature or out of the refrigerator.
