Layered Fiesta Salad 

4 cups romaine lettuce cut in bite-sized pieces

2 tomatoes, seeded and diced

1 cup canned beans of your choice (garbanzo, kidney, black, etc.)

  drained

1 red pepper, diced

1 green pepper, diced

½ cup scallions, sliced

¼ cup Spanish olives

¼ cup shredded cheese

1 avocado, sliced

¾ cup Leeza’s Southwestern Salad Dressing & Marinade

     On a serving platter, begin layering salad pyramid-fashion, starting with the lettuce. Follow with vegetables and beans, alternating colors and textures. Top with the olives, cheese and avocado slices. Pour Leeza’s Southwestern Salad Dressing & Marinade over the top and serve. All ingredients are optional, add or substitute your favorites. Add cooked chicken or shrimp to make a light supper.
